Risotto mit Fenchel und Fisch

Wie auch schon bei meinem Mallorca Trip und meiner Sardinien Erzählung möchte ich Euch auch dieses mal ein leckeres Landestypisches Rezept mit auf den Weg geben. Ganz nach dem Motto: mit allen Sinnen genießen.
Pasta wäre jetzt der Klassiker gewesen und ich erinnere daher an dieser Stelle gerne an mein Lieblingsrezept „Spaghetti mit Artischocken„, eines der ersten Rezepte, die ich gepostet habe. Aber heute gibt es ein anderes typisch italienisches Rezept: Risotto. In diesem Fall mein Lieblingsrisotto: Fenchelrisotto mit Zander– geht. Fenchel-Risotto schmeckt auch ohne Fisch (also vegetarisch), aber leider echt nicht so genial wie mit Fisch…risotto

Fisch sollte man immer frisch kaufen ( so dass man weiß wo er herkommt) oder aus der Truhe, da aber bitte unbedingt auf ein Bio-Siegel achten. Bei Fisch gibt es verschiedene Siegel und alle haben einen anderen Anspruch! Das WWF Siegel und das msc Siegel sollten Minimum drauf sein. Ich esse Aus der Truhe eigentlich nur noch Süßwasserfische, wie eben den Zander. Hier gilt das asc Siegel am besten mit einem Bio-Siegel.

Aber nun zum Wesentlichen, das Rezept, wie jetzt immer, zum ausdrucken.

Ingredients
  1. 2 große Fenchelknollen
  2. 300Gramm Risotto Reis
  3. Ca 2 Gläser Weißwein
  4. 3 Schalotten
  5. 0,75liter Gemüsebrühe
  6. 2 Zanderfilets oder anderen Fisch
  7. 1 Zitrone
  8. 200 Gramm Parmesan
  9. Olivenöl
  10. Salz
  11. 2 Knoblauchzehen
  12. Pfeffer
  13. 1 Esslöffel Butter
  14. Thymian
Instructions
  1. 1 Fenchel waschen, säubern, alle harten äußeren Teile entfernen und in dünne Scheiben schneiden. Grüne Blätter aufbewahren. Gemüsebrühe vorbereiten.
  2. 2. Fisch abwaschen und abtrocknen. In einer ofenfeste Schale mit Knoblauch, Thymian,Olivenöl und Zitronensaft ab in den Ofen bei 200* (180* Umluft).
  3. 3. Schalotten fein hacken in Olivenöl etwa 5 Min. andünsten. Anschließend den Reis hinzufügen und auch glasig werden lassen. Mit 1 Glas Weißwein löschen. Mit Pfeffer würzen und Fenchel dazu geben.
  4. 4. Schöpflöffelweise die heiße Gemüsebrühe löschen, dabei ständig umrühren.
  5. Nochmal mit Weiwein löschen. Erst dann wieder nachgießen, wenn der Reis die Brühe vollständig aufgesogen hat. nach etwa 18 - 20 Min. ist der Reis gar und sämig. Salz, Pfeffer etwas Butter und viel Parmesan einrühren. Bei geschlossenem Deckel den Reis 1 Min. ruhen lassen, kurz umrühren und vom Herd nehmen. Nochmal mit Salz und Pfeffer abschmecken.
  6. 5. Wenn mit du eine Grillfunktion am Herd hast, kurz den Fisch übergrillen. (Der Fisch sollte insgesamt eine gute halbe Stunde im Ofen sein)
  7. 6. Risotto auf Teller anrichten. Fisch auf den Risotto legen und mit der Zitronen-Knoblauch-Öl Sauce beträufeln. Mit Fenchelblättern und ggf. Kresse garnieren.

Fennel risotto with Fish

As you maybe remmber from my Mayjorca trip and my Sardinia story I would also like to make a tasty recipe typical for the Country. all senses enjoy.
Now paste would have been the classic and, hence, I remind at this point with pleasure of my favorite recipe „spaghetti with artichokes“, one of the first recipes which I have gepostet. But today there is another typically Italian recipe: Risotto. In this case my favorite risotto: Fennel risotto with pikeperch goes. Fennel risotto also tastes without fish (vegetarian), unfortunately, really not so brilliantly as with fish…

One should buy fish always freshly or from the chest, however, pay attention please absolutely to a bio-seal. With fish there are different seals and everybody has another right! The seal WWF and the msc seal should be a minimum on it. I eat from the chest, actually, only freshwater fishes, how just the pikeperch. Here the asc seal is valid best of all with a bio-seal.

Ingredients
  1. 2 large fennel bulbs
  2. 300Gramm risotto rice
  3. Ca 2 glass of white wine
  4. 3 shallots
  5. 0,75 liter vegetable broth
  6. 2 Zander fillets or other fish
  7. 1 lemon
  8. 200 grams Parmesan
  9. olive oil
  10. salt
  11. 2 cloves of garlic
  12. pepper
  13. 1 tablespoon butter
Instructions
  1. Wash 1 fennel, clean, remove any tough outer parts and cut into thin slices. Keep Green leaves.
  2. Wash and dry 2. Fish. In an ovenproof dish with garlic, olive oil and lemon juice into the oven at 200 * (180 * convection).
  3. Chop shallots finely in olive oil for about 5 minutes.. Then add the rice and also glassy blank. Add the fennel and pepper.
  4. Give the first glass of wine and wait till it is evaporating.
  5. Ladle way to delete the hot vegetable stock, stirring constantly.
  6. Delete the next time with white wine again.
  7. Only then pour again until the rice has absorbed the broth completely. after about 18 - 20 min. the rice is cooked and creamy. Salt, pepper and butter as much Parmesan stir. When the lid is closed the rice can be 1 minute rest, stir briefly and remove from heat.
  8. If you with a grill on the stove have just about grilling the fish.
  9. risotto arrange on plates. put fish on the risotto and drizzle with the lemon and garlic oil sauce. Garnish with fennel leaves and possibly cress.
