Superfood Salat

 

. Ein Begriff der mir in letzter Zeit immer häufiger begegnet ist und dessen Bedeutung ich deshalb auf den Grund gegangen bin. (Engl. below)

Aber hier zunächst das Rezept:

Zutaten:

1 Tasse Quinoa 

1 Packung vakuuimierte rote Beete

1 Avocado 

1 Mango

Kresse

1 Zwiebel

Schuss Apfelsaft oder Orangensaft 

Balsamico- oder Apfel-Essig

Öl

0,5 Granatapfel 

Koriander

Zubereitung:

  • Rote Beete waschen und klein schneiden. Zwiebel klein schneiden, mit Rote Beete mischen. Mit Schuss Essig anmachen und ziehen lassen.
  • Quinoa zubereiten
  • Avocado schälen und klein schneiden. Mango schälen und klein schneiden.
  • Wenn Quinoa fertig ist alles miteinander mischen. Schuss Apfelsaft oder O Saft dazugeben. Etwas Essig nachgeben und etwas Olivenöl. Mit Salz und Pfeffer würzen. 
  • Granatapfel teilen. Kerne über Salat geben. Kresse und Koriander drüber streuen und lauwarm servieren.

 Superfoods sind Lebensmittel, deren Nährstoffgehalt besonders hoch ist und die zudem keine schädlichen Stoffe enthalten wie Zucker, tierische Fette oder Gluten, geschweige denn künstliche Zusatzstoffe.

Daher können Supperfoods vor allem in der kalten Jahreszeit dazu beitragen, dass unser Immunsystem gestärkt wird, unser Engerie-Level höher ist und wir zudem unsere Sommer-Bikini-Figur behalten. 😉

Daher habe ich nun diverse Superfood Rezepte ausprobiert und möchte diese nach und nach vorstellen. Jedem Rezept dient ein oder mehrere Superfoods als Rezeptgrundlage.
Anfangen möchte ich mit Quinoa. Gepaart mit Granatapfel und Avocado und rote Beete.

Warum sind Quinoa, rote Beete, Granatapfel und Avocado Superfoods? 

Quinoa

Quinoa ist ein sogenanntes Pseudogetreide aus Südamerika. Pseudogetreide werden ähnlich wie normale Getreidearten verwendet, haben aber kein Gluten, jedoch auch keine Eigenbackfähigkeit. 

Quinoa wird als Superfood eingestuft, da es besonders reich an Eiweiß, Eisen und Magnesium ist. Zudem umfasst es alle essentiellen Aminosäuren. Sowie das Vitamin B1.

Bei den Inkas galt es als Heilmittel gegen Halsschmerzen. Zudem zeigen Wissenschaftliche Studien, das Quinoa gegen Migräne hilft. Dies lässt sich auf den hohen Magnesiumgehalt zurückzuführen, der für eine Entspannung der Blutgefäße sorgt, deren Verspannung als Grund für Migräne gilt. 

Rote Beete 

Rote Beete hat ebenfalls einen sehr hohen Anteil an Eisen und Vitamin B (Fohlsäure). Man kann sie im heimischen Garten anbauen und um diese Jahreszeiten ernten. Eingekocht und vakuumverpackt oder in feuchten Sand im Keller hält sie sehr lange.

Der ebenfalls hohe Nitratgehalt der roten Beete kann nachweislich den Blutdruck senken und wirkt leistungssteigernd. Sie schützt  Herz, Galle,Leber und Blutgefäße.

Avocado 

Die Avocado wächst in tropischen Klima, aber auch in Südspanien habe ich schon welche geerntet. Die Avocado ist eine sehr fettreiche Frucht. Jedoch hat sie vor allem gute Fette. Sie ist reich an Vitamin A, Vitamin E. Carotinen und Biotin.

Vor allem ihre Eigenschaft andere Obst und Gemüsesorten für unseren Körper zu perfektionieren, macht sie so besonders wertvoll.  

Vitamin A, Vitamin D, Vitamin E, Vitamin K, Alpha-Carotin, Beta-Carotin, Lutein, Lycopin, Zeaxanthin und Calcium. Sie alle werden um 50 bis 100 Prozent besser absorbiert, wenn die wertvollen Fette aus der Avocado vorhanden sind.

Zentrum für Gesundheit 

Der Verzehr von Avocado kann den Cholesterinspiegel senken, ist gut für die Augen und die Blutbildung.

Granatapfel

Der Granatapfel wächst im Süden von Europe, in Afrika, sowie in Israel. Der Granatapfel ist nicht nur einer der schönsten Früchte dieser Erde, weswegen er schon im alten Testament und im Koran seine Platz findet, er ist auch eine der gesündesten Nahrungsmittel überhaupt.

Er ist reich an Antioxidantien,Kalium, Calcium, Eisen Vitamin C und Vitamin B5.  

Zum Superfood unter den Superfoods machen ihn vorwiegend die Antioxidantien. Die antoxidantische Wirkung ist beim Granatapfel 1000maö stärker als bei den roten Säften und ebenfalls stärker als beim Grünen Tee. So hilft Granatapfel Hautalterung vorzubeugen, das Herz-Kreislaufsystem zu stärken,wirkt  entzündungshemmend, konzentrationsfördernd und antibakteriell. Das beeindruckende  aber ist, dass neuste Studien sogar bewiesen haben das Granatapfel sogar im Kampf gegen Krebs helfen kann (zum Beispiel: ClinicalTrails.gov „Pomegranate Cancer“) 

Und hier nun endlichen der Salat für das Immunsystem und mehr Energie. Für einen zusätzlichen Boost an Vitamin C und A sorgt die Mango. Auch Koriander wird oft zu den Superfoods gezählt, auch er wirkt entzündungshemmend  und ist reich an Eisen. Kresse zählt zu den Heipflanzen und Apfel(essig) ist gut für den Darm.

Bei so viel gesundheitsfördernden Eigenschaften liegt der Verdacht nahe, dass der Salat nicht schmeckt – aber falsch gedacht, er ist sensationell lecker.

I would like to start with Quinoa. Combined with pomegranate and avocado and beetroot.

Why are Quinoa, beetroot, pomegranate and avocado Superfoods

Quinoa

Ingredients
  1. 200gr.Quinoa
  2. 2 gekochte Rote Beet
  3. 0,5 Zwiebeln
  4. 0,5 Granatapfel
  5. 5 Stiele Koriander
  6. 1 Avokado
  7. 1 Mango
  8. 1 Saft einer Zitrone
  9. rote Brunnenkresse
  10. 2 EL Apfelsaft
  11. 3 EL Balsamico-Essig oder Apfelessig
  12. 3 EL Olivenöl
  13. 1 Chilischote oder Chilipulver
  14. Salz und Pfeffer
  15. ENGLISH
  16. 200gr.Quinoa
  17. 2 boiled Red Beet
  18. 0.5 onions
  19. 0.5 pomegranate
  20. 5 stalks coriander
  21. 1 avocado
  22. 1 mango
  23. 1 lemon juice
  24. red Watercress
  25. 2 tablespoons apple juice
  26. 3 tablespoons balsamic vinegar or apple cider vinegar
  27. 3 tablespoons olive oil
  28. 1 chili pepper or chili powder
  29. salt and pepper
Instructions
  1. Quinoa wie angeben kochen. Rote Beete schneiden. Zwiebeln schneiden. Zwiebeln und rote Beete mischen. Schon vorab mit 1El Essig und je einer Briese Salz und Pfeffer anmachen.
  2. Avokado schneiden.Kerne aus Granatapfel pellen. Schale von Mango entfernen. Mango in kleine Stücke schneiden.Quinoa, Avokado, Mango und Granatapfel Kerne zum Rote Beete Salat geben.
  3. Chili klein schneiden. Apfelsaft, Zitronensaft, 2 EL Essig und das Olivenöl,Chili, Salz und Pfeffer zu einer Vinaigrette mischen. Alles miteinander verrühren. Koriander-Blätter von Stielen befreien. Kresse abschneiden. Über den Salat geben. Lauwarm oder kalt genießen.
  4. ENGLISH
  5. Quinoa cook like state. Cut beetroot. Cut the onions. Mix onions and beetroot. Already prepare with 1 tsblespoon vinegar and add salt and pepper.
  6. Peel avocado and cut it in small pieces.core the pomegranate. Remove bowl from mango. cut mango into small pieces. Quinoa, avocado, mango and pomegranate seeds for beetroot salad.
  7. Chili chop. Mix apple juice, lemon juice, 2 tablespoons vinegar and olive oil, chili, salt and pepper to a vinaigrette. Mix everything. Coriander leaves from stems exempt. Cress cut. Pour over the salad. Warm or cold to enjoy.
